To prevent wearing and damage of your pans, there are some useful tips to ensure you get the most out of your pans and trays.
Daily Use
- With Bread Pans use sparse amounts of good quality release agent.
- When the life of a PTFE Teflon coated pan or tray is starting to stick you can use a little oil to continue to use the product. If cake or high sugar product is baked in the pan or tray a little oil is recommended to prevent sticking. Use a proper recommended release oil for high sugar products.
- Never use sharp scrapers or metal objects to remove product from the tray or pan. This will cause scratches and can delaminate the Teflon coating or worse cause rusting. Do not use any implement that will scratch the Teflon surface.
- Never place the pans or trays through an oven without product in the pan or tray. This will cause thermal breakdown of the coating and reduce its life.
Never stack the pans or trays inside each other unless they have a nesting adaptor or nesting band or other design which allows them to nest without scraping each other. - Cross-stack upside down if this is the case or stack in a rack.
- Automated stacking increases the life of any pan or tray due to the ability to stack correctly. If manual stacking is used take care not to damage the coating surface.
- Never store pans or trays in an oven or prover.
Cleaning
- Never put the trays or pans through an automated dishwasher as these are too severe to clean gently.
- To clean the trays or pans use a soft brush or blower. Some bakeries have installed automated brushes and blowers to remove crumbs and seeds from the trays or ans.
- Never use alkali / acidic or harsh chemicals on the trays or pans
- Never use a high-pressure washer on the trays or pans
- Never soak the pans or trays in water.
- If there is a residue on the pans or trays wipe with a damp cloth whilst still warm.
- Never store product in the pans or trays, it is recommended to remove as soon as possible after baking. Leaving product in the trays can cause acidic conditions if left for too long and will affect the coating. It is important to de-pan products as quickly as possible after baking before sweating occurs
Store the pans and trays in a warm dry environment away from moisture steam or humidity.
It’s good sense to look after your pans and trays because their quality is crucial to the quality of your products.
